  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the Biscoff spread, butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until combined.
  6. Stir in the chocolate chips, ensuring they are evenly distributed throughout the dough.
  7. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper, spacing them about two inches apart.
  8. Bake for 10-12 minutes or until the edges turn golden brown, keeping an eye on them to avoid overbaking.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Chill the dough for about 30 minutes before baking for chewier cookies. Add a pinch of sea salt on top before baking for enhanced flavor.
