Ingredients
- 1 cup Lotus Biscoff spread
- 1/2 cup brown sugar

- 1/2 teaspoon cinnamon

Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the Biscoff spread, butter, brown sugar, and granulated sugar until smooth.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until combined.
- Stir in the chocolate chips, ensuring they are evenly distributed throughout the dough.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper, spacing them about two inches apart.
- Bake for 10-12 minutes or until the edges turn golden brown, keeping an eye on them to avoid overbaking.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Chill the dough for about 30 minutes before baking for chewier cookies. Add a pinch of sea salt on top before baking for enhanced flavor.
