Description

A hearty and flavorful stovetop chili made with ground beef, beans, and spices, perfect for chilly days and gatherings.

Ingredients

  • 1 lb ground beef
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (6 oz) tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 2 cups beef broth
  • Olive oil for sautéing

Instructions

  1. Heat the olive oil in a large pot over medium-high heat and add the diced onion. Cook for 3-4 minutes until soft and translucent.
  2. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Add the ground beef, breaking it up as it cooks for about 5-7 minutes until browned.
  4. Drain off any excess fat if necessary. Sprinkle in the chili powder, cumin, smoked paprika, and cayenne pepper. Stir well and cook for 1-2 minutes.
  5. Mix in the tomato paste and cook for another 2-3 minutes.
  6. Pour in the diced tomatoes and beef broth. Season with salt and pepper, then bring to a simmer. Lower the heat and cook for 20-25 minutes.
  7. Add the kidney beans and black beans. Stir and heat through for another 10-15 minutes.
  8. Taste and adjust seasoning if needed, then serve hot with desired toppings.

Notes

For a lighter dish, use lean ground beef. Add veggies for nutrition and adjust spices for desired heat.
