Description
Crispy on the outside and tender on the inside, these Bang Bang Salmon Bites are a delicious way to enjoy salmon, perfect as an appetizer or a main dish.
Ingredients
- 1 lb fresh salmon (skinless and cut into bite-sized cubes)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 cup panko breadcrumbs
- 1 tbsp olive oil or spray for crisping
- ½ cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha (adjust to spice level)
- 1 tsp honey (optional)
- Juice of ½ lime
- 2 cups cooked jasmine rice (or cauliflower rice)
- 1 cup shredded purple cabbage
- 1 avocado (sliced)
- ½ cup shredded carrots
- 2 green onions (sliced)
- Fresh cilantro and sesame seeds for garnish
Instructions
- Preheat the oven to 400°F (200°C) or the air fryer to the same temperature.
- In a bowl, mix the garlic powder, smoked paprika, salt, and black pepper. Toss the salmon cubes in the seasoning mix until well-coated.
- Place the seasoned salmon cubes in a shallow dish and sprinkle panko breadcrumbs over them, pressing down gently to help the breadcrumbs stick.
- If baking, spread the salmon bites on a lined baking sheet. Drizzle with olive oil or spray for crisping and bake for about 12-15 minutes or until golden. If using an air fryer, cook for about 8-10 minutes or until crispy.
- In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, honey, and lime juice. Mix until smooth to make the Bang Bang sauce.
- Serve the salmon bites over jasmine rice or cauliflower rice, topped with shredded cabbage, sliced avocado, shredded carrots, and sliced green onions. Drizzle with Bang Bang sauce and garnish with fresh cilantro and sesame seeds.
Notes
Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in the oven or air fryer to retain crispiness.
