Description

Simple and delicious baked zucchini meatballs that are a healthy twist on comfort food.


Ingredients

  • 2 medium zucchinis, grated
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 egg
  • Salt and pepper to taste
  • Olive oil spray


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine the grated zucchinis, breadcrumbs, Parmesan cheese, parsley, garlic, egg, salt, and pepper.
  3. Mix until well combined, using your hands.
  4. Form the mixture into small balls and place them on a baking sheet lined with parchment paper.
  5. Lightly spray the tops with olive oil.
  6. Bake in the preheated oven for about 25-30 minutes, or until golden brown.
