Delicious cookies bringing the warm flavors of fall with apple cider and comforting spices.
Ingredients
- 2 cups apple cider
- 20 tablespoons unsalted butter
- 2½ cups all-purpose flour
- 2 teaspoons apple pie spice or pumpkin spice
- 1 large egg (room temperature)
- 1¼ cup light brown sugar
- ¾ cup granulated sugar
- 1 teaspoon baking powder
- Ground cinnamon (for topping)
Instructions
- In a saucepan, simmer apple cider over medium heat until it reduces to about ¼ cup. Let it cool.
- Melt the butter on low heat until it turns lightly brown, then let it cool for 15 minutes.
- In a bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
- In another bowl, mix the browned butter with both sugars. Then add the egg, reduced cider, and vanilla extract.
- Gradually mix the dry ingredients into the wet mixture until everything is just combined.
- Use a cookie scoop to drop dough onto a lined baking sheet.
- Bake at 375°F for 9–11 minutes or until the edges are set.
- Let the cookies cool slightly before rolling them in cinnamon sugar and drizzling on some icing.
Notes
Make sure your butter is browned but not burnt for the best flavor. Don’t overmix the dough to keep the cookies soft. Adjust spices to your taste, adding more cinnamon if desired.
