A quick and delicious air fryer eggplant recipe that’s crispy and savory.
Ingredients
- 1 large eggplant
- 2 tbsp avocado oil
- 2 tbsp white sugar
- 2 tbsp low sodium soy sauce
- 2 tbsp minced garlic (about 3 cloves)
- 1 tbsp chili oil (optional)
Instructions
- Preheat your air fryer to 350 degrees Fahrenheit.
- Slice the eggplant into thick slices, about half-inch rounds.
- Cut slits in the middle of each round.
- In a shallow bowl, mix together the avocado oil, sugar, soy sauce, minced garlic, and chili oil.
- Line your air fryer basket with parchment paper.
- Place the eggplant rounds in a single layer in the air fryer.
- Carefully pour the sauce over each eggplant round.
- Air fry for 15 minutes at 350 degrees or broil for an additional 2 minutes for extra crispiness.
Notes
For alternatives, you can use olive oil, brown sugar, tamari, or garlic powder as substitutes.
