Description

A quick and delicious air fryer eggplant recipe that’s crispy and savory.


Ingredients

  • 1 large eggplant
  • 2 tbsp avocado oil
  • 2 tbsp white sugar
  • 2 tbsp low sodium soy sauce
  • 2 tbsp minced garlic (about 3 cloves)
  • 1 tbsp chili oil (optional)


Instructions

  1. Preheat your air fryer to 350 degrees Fahrenheit.
  2. Slice the eggplant into thick slices, about half-inch rounds.
  3. Cut slits in the middle of each round.
  4. In a shallow bowl, mix together the avocado oil, sugar, soy sauce, minced garlic, and chili oil.
  5. Line your air fryer basket with parchment paper.
  6. Place the eggplant rounds in a single layer in the air fryer.
  7. Carefully pour the sauce over each eggplant round.
  8. Air fry for 15 minutes at 350 degrees or broil for an additional 2 minutes for extra crispiness.

Notes

For alternatives, you can use olive oil, brown sugar, tamari, or garlic powder as substitutes.
