Ingredients
- 2 lbs Russet potatoes, peeled and quartered
- 1/2 cup whole milk
- 4 tablespoons unsalted butter
- 1/4 cup sour cream
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
- 1/4 teaspoon garlic powder (optional)
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 2 cups panko breadcrumbs
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray (olive oil or avocado oil)
- 1/4 cup shredded cheddar cheese
- 2 tablespoons chopped fresh chives
- 2 tablespoons cooked and crumbled bacon
Instructions
- Boil the potatoes until fork-tender.
- Drain the potatoes and return them to the pot.
- Mash the potatoes until smooth, then mix in milk, butter, and sour cream.
- Season with salt, pepper, and garlic powder.
- Fold in cheese, chives, and bacon.
- Allow the mixture to cool completely.
- Set up dredging stations for flour, beaten eggs, and the panko mixture.
- Scoop, roll, and dredge the mashed potatoes into balls.
- Preheat the air fryer to 400°F (200°C).
- Arrange the potato balls in a single layer in the air fryer basket, spraying lightly with cooking spray.
- Air fry for 8-10 minutes, flipping halfway.
- Serve immediately with your favorite sauces.
Notes
Ensure potatoes are fully cooled before rolling them into balls to avoid stickiness. Don’t overcrowd the air fryer for best results.
