Description

Crispy on the outside and cheesy on the inside, these Air Fried Rice Balls are a quick and delicious snack that’s perfect for any occasion.


Ingredients

  • 2 cups risotto
  • 1 cup mozzarella cheese, cubed
  • 2 eggs
  • 1 cup breadcrumbs
  • Parmesan cheese, for sprinkling
  • Salt and pepper, to taste
  • Olive oil spray
  • Marinara sauce, for serving


Instructions

  1. Prepare the risotto according to package instructions and let it cool.
  2. Mix in the mozzarella cheese, salt, and pepper until well combined.
  3. Form the mixture into balls about the size of golf balls.
  4. Dip each ball in beaten eggs, then roll in breadcrumbs until fully coated.
  5. Spray the air fryer basket with olive oil and place the rice balls in a single layer.
  6. Spray the top of the rice balls with olive oil.
  7. Cook in the air fryer at 375°F for 10-12 minutes, or until golden brown and crispy.
  8. Serve warm with marinara sauce for dipping.

Notes

Make sure to preheat your air fryer and avoid making the rice balls too big for even cooking.
