Crispy on the outside and cheesy on the inside, these Air Fried Rice Balls are a quick and delicious snack that’s perfect for any occasion.
Ingredients
- 2 cups risotto
- 1 cup mozzarella cheese, cubed
- 2 eggs
- 1 cup breadcrumbs
- Parmesan cheese, for sprinkling
- Salt and pepper, to taste
- Olive oil spray
- Marinara sauce, for serving
Instructions
- Prepare the risotto according to package instructions and let it cool.
- Mix in the mozzarella cheese, salt, and pepper until well combined.
- Form the mixture into balls about the size of golf balls.
- Dip each ball in beaten eggs, then roll in breadcrumbs until fully coated.
- Spray the air fryer basket with olive oil and place the rice balls in a single layer.
- Spray the top of the rice balls with olive oil.
- Cook in the air fryer at 375°F for 10-12 minutes, or until golden brown and crispy.
- Serve warm with marinara sauce for dipping.
Notes
Make sure to preheat your air fryer and avoid making the rice balls too big for even cooking.
